Right this very second, over a dozen of the best chefs in the world are convening in Finland (the country!) for the third edition of Cook It Raw. The lineup consists of European and Asian avant garde cooks like Albert Adria, Inaki Aizpitarte (Le Chateaubriand, Paris), Pascal Barbot (L’Astrance, Paris) and Rene Redzepi (Noma, Copenhagen). The two American reps should be familiar faces to most: David Chang of Momofuku and our very own Daniel Patterson.
This year, the theme is “Into the Wild” and they’re taking the show to the northernmost reaches of Finland: Lapland and the Arctic Circle, where “the uncompromising landscape of Lapland will reveal itself, with its luxuriant wild life, flora and fauna, to the Think Tank of the cutting edge cuisine.”
